Wok-Fried Monkey-Head Mushroom & Assorted Capsicum with Black Pepper

 

Ingredients :

180g monkey-head mushroom
20g red & green capsicum (sliced)
8g black pepper powder
6 slices ginger
1 teaspoon corn flour (mixed with water)

Ingredients for Sauce
1 teaspoon dark soy sauce
20 light soy sauce
10g sugar
8 tablespoons plain water

 

Method :

  1. Sliced mushroom into small pieces.
  2. Coat with corn flour and deep-fry till golden brown and crispy.
  3. Pan-fry ginger, black pepper, red & green capsicum.
  4. Mix well sauce and pour in
  5. Cook for 30 seconds before thickening the sauce with corn starch and serve.

Cooking tips :
Remember to cover up the wok, as three are water content in the monkey-head mushroom, thus the oil might pop when deep-frying.
