This is the Chinese version of the western omelet. It is usually served either on its own (or with a filling, as the following recipe), or it can be cut into strips and stirred into fried rice as a garnish.

Ingredients :
4 Eggs
1 tablespoon soy sauce
Salt and pepper to taste
25g butter
1 shallot, very finely chopped
125g beans sprouts
50g Cooked ham, cut into thin strips
