Szechuan Recipe : Fried Custard with Rose Syrup

 

1/4 cup flour
1/4 cup custard powder
3 egg yolk
1 cup cold water
1 tablespoons sugar
4 tablespoon cornstarch
cooking oil for deep-frying

Syrup Ingredients
1 cup cold water
4 dessertspoons sugar

Blended
1/2 teaspoon cornstarch
1 tablespoon water

A few drop rose essence

 

  1. To prepare syrup. Bring water to the boil and stir in sugar till dissolved.
  2. Thicken with cornstarch-paste and flavor with rose essence. Remove and keep aside.
  3. Mix together the flour, custard powder, egg yolks, water, sugar and 1 tablespoon cornstarch till smooth.
  4. Stir over medium heat till mixture becomes firm.
  5. Remove to a shallow dish till cool and set.
  6. Cut into strips and sprinkle with remaining cornstarch.
  7. Heat oil and deep-fry custard strips till golden brown.
  8. Drain well and serve with rose syrup.
