Bring a pot of water to the boil. Drop in noodles and cook, 2 minutes. Drain and plunge into cold water immediately. Drain again.
Heat 3 tablespoons lard in pan and fry noodles till browned on the underside.
Turn noodles over, add another 2 tablespoons lard and cook the other side till browned. Dish up.
Heat remaining lard and stir-fry fish meat, abalone, ham, chicken meat and liver till color changes.
Add mustard greens and stir-fry a few seconds more.
Add seasoning ingredients and bring to the boil
Thicken with cornstarch-paste, then dish up over noodles. Serve hot.
