Fried Soft Noodles

Preparation time : 30 minutes
Cooking time : 8 minutes
Ingredients :
1/2 recipe noodle dough
1 tablespoon peanut oil
1 slice onion 1/4 pint ( U.S. 5/8 cup) chicken stock good pinch each salt, sugar and Ve-Tsin 1/2 teaspoon soy sauce
1 teaspoon cornflour
1 dessertspoon cold water
2 onion 'flower'
Method :
Boil the noodles for 10 minutes then drain them well. Heat the oil and toss the onion in it for 1/2 minutes. Add the drained cooked noodles and turn them over and over to coat them with the oil.
Add the stock, seasonings and soy sauce and cook for 4-5 minutes. Blend the cornflour with the water and stir it in, adding a little extra stock, if necessary. Boil for 11/2 minutes.
Turn all into a heated serving dish and garnish with the onion 'flower'.
Note:
You may be able to buy fresh egg noodles. In this case, proceed as above. If you buy packaged egg noodle, they will require a little longer cooking.
