Fried Cucumber and Pineapple

Heat the oil in a frying-pan. Add the cucumber slices, salt and vinegar and cook for 4 minutes, stirring frequently. Add the pineapple to the pan and cook for a further 2 minutes, stirring occasionally.
Beat the water, flour, sugar and soy sauce together until the mixture I smooth. Pour into the frying-pan and bring to the boil, stirring stirring occasionally.
Transfer the mixture to a warmed serving dish and serve at once.
