This in one of the basic dished of Chinese cuisine and can be either served on its own, or used as an elaborate rice accompaniment dish.
Serves : 4-6
Ingredients :
225g long-grain rice, soaked in cold water for 30 minutes drained
450ml water
11/2 teaspoon salt
2 tablespoon vegetable oil
2 medium onions, finely chopped
225g cooked ham, finely chopped
2 tablespoons petits pois
2 medium tomatoes, blanched, peeled and quartered
225g frozen shrimps, thawed and shelled
1 tablespoon soy sauce
1 egg, lightly beaten

Method :
- Put the rice into a saucepan and pour over the water and 1 teaspoon of salt. Bring to the boil, reduce the heat to low and cover the pan. Simmer for 15 to 20 minutes, or until the water has been adsorbed and the rice is cooked and tender. Remove from the heat.
- Heat the oil in large saucepan. Add the onions and fry until they are soft. Stir in the ham, petits pois, tomatoes, shrimps and remaining salt and cook for 1 minute, stirring constantly. Stir in the cooked rice and cook for 2 minutes, stirring constantly. Add the soy sauce and egg and cook for 2 minutes, stirring constantly.
- Transfer the mixture to a warmed serving dish and serve at once.
