Method :
Put the beef stripes in a shallow bowl. Rub them with salt, pepper, ginger and corn flour ( cornstarch ) and set aside for 10 minutes.
Heat the oil in a frying-pan. Add the root ginger and stir-fry for 2 minutes. Add the beef strips and stir-fry for 3 to 5 minutes, or until they are cooked enough.
Transfer the strips to a warmed serving dish and sprinkle over the spring onions ( scallions ).
Serve at once.
