Noodles with Mixed Meats, Prawns and Vegetables

Ingredients :
1-2 oz. long life-noodles
Peanut oil
11/2 tablespoon cooked chicken
11/2 tablespoon cooked roast lean pork
1 tablespoon canned bamboo shoots
1/2 tablespoon green pepper
1 medium-sized onion
1/2 tablespoon carrot
4 tablespoon bean sprouts
1/4 pint ( U.S. 5/8 cup) hot chicken stock
Tiny pinch pepper
Pinch each salt, sugar and Ve-Tsin
1/2 teaspoon soy sauce
1 small teaspoon cornflour
1 tablespoon cold water

Method :
- Drop the noodles into boiling water and boil for 4-5 minutes. Drain well. Sprinkle with a drop or two of oil to prevent them sticking together.
- Cut the meats, bamboo shoots, pepper, onion and carrot into thin strips. Pick over the bean sprouts.
- Heat 1 tablespoon oil in a frying-pan. Add the noodles and turn them over and over in it, adding a little more oil, if necessary. Add the vegetables and turn them over and over. Add the stock, seasonings, chicken, pork and prawns and mix all together. Add the soy sauce. Finally, blend the cornflour with the water, stir it into the boiling mixture and cook for 11/2 minutes. Turn into a heated dish and serve.
