Pan-fried Salmon and Roasted Miso Cod
   


Serves 4

Ingredients

  • 1 x 200g salmon fillet
  • 1 x 200g cod fillet

Seasoning for salmon

  • dash of Japanese soya sauce
  • sesame oil
  • chopped onion
  • chopped garlic
  • ginger juice

Seasoning for cod

  • Dash of miso
  • Mirin (Japanese rice wine)
  • Sugar

Yellow mashed vegetable

  • 1 potato, peeled
  • ½ carrot
  • ¼ teaspoon salt

Red mashed vegetable

  • 1 red capsicum, removed seeds, diced
  • ½ onion, peeled diced
  • 2 pips garlic, peeled, chopped
  • 1 red chili, removed seeds, sliced
  • 2 tomatoes
  • ¼ teaspoon salt

For garnishing

  • Belacan sambal
  • Japanese cucumber
  • Onion shreds
 
 
 

Method for Cooking Pan-fried Salmon and Roasted Miso Cod:

  1. Yellow mashed vegetable: Boil potato and carrot until soft. Remove, add in salt and mash till fine.

  2. Red mashed vegetable: Heat up oil and sauté garlic until fragrant. Add in capsicum, onion and chili and stir well. Add in tomato, salt and water. Cook over low heat for 30 minutes or until all ingredients are tender. Remove and put into blender and blend till smooth. Strain.

  3. Put yellow and red mashed vegetable onto a platter.

  4. Mix salmon with seasoning and marinate for 30 minutes. Drain and pan-fry until both sides are golden brown and cooked.

  5. Mix cod with seasoning and marinate for 20 minutes. Drain and bake in preheated oven at 200°C for 20 minutes or until cooked.

  6. Place salmon and cod on top of mashed vegetables. Serve with sambal, cucumber and onion.
