Yellow mashed vegetable: Boil potato and carrot until soft. Remove, add in salt and mash till fine.
Red mashed vegetable: Heat up oil and sauté garlic until fragrant. Add in capsicum, onion and chili and stir well. Add in tomato, salt and water. Cook over low heat for 30 minutes or until all ingredients are tender. Remove and put into blender and blend till smooth. Strain.
Put yellow and red mashed vegetable onto a platter.
Mix salmon with seasoning and marinate for 30 minutes. Drain and pan-fry until both sides are golden brown and cooked.
Mix cod with seasoning and marinate for 20 minutes. Drain and bake in preheated oven at 200°C for 20 minutes or until cooked.
Place salmon and cod on top of mashed vegetables. Serve with sambal, cucumber and onion.
