Method :
Have the pork cut the way of the grain. Divide it, lengthwise into two strips. Place them in a bowl. Add the salt, sugar, Ve-Tsin, cochineal, bean curd and soy sauce.
Work these well together until the meat soaks them up.
Impale each piece of meat on a wire hook and hang them on a bar of the oven shelf with a drip tray underneath.
Bake for 30 minutes in the oven preheated to 475 °F. or Gas Mark 9.
Very thinly slice the meat across the grain. Place the pieces in a preheated serving dish and pour the juices from the drip tray over them.
Garnish with parsley.
