Cantonese Recipes : Sauteed Gizzards with Pineapple

 

8 chicken gizzards
4 slices pineapple (cut into small pieces)
1 tablespoon rice wine
½ teaspoon ginger juice
10 slices sweet preserved ginger
1 green bell pepper (diced)
2 red chilies (diced)
1 stalk spring onion (cut into 2.5cm sections)
cooking oil for deep-frying

Sauce Ingredients
3 tablespoons tomato sauce
2 tablespoons sugar
2 tablespoons vinegar
1 teaspoon cornstarch
1 teaspoon salt
1 teaspoon sesame oil
3 tablespoons water

 

  1. Clean and remove tough membranes from gizzards. Make criss-cross cuts into fleshly parts of gizzards, 6mm apart, then quarter each gizzard.
  2. Add rice wine and ginger juice to gizzards and marinate 10 minutes.
  3. Heat oil and deep-fry gizzards, 5 seconds. Drain.
  4. Drain off all but 3 tablespoons oil from pan. Reheat and stir-fry spring onion, sweet preserved ginger, pineapple, green pepper and red chilies briefly.
  5. Add gizzards and stir-fry 30 seconds more.
  6. Add sauce ingredients and heat through.
  7. Dish up and serve hot.
