Cantonese Recipes : Sauteed Lobster in Tomato sauce

 

1 large lobster
2 large onions
2½ tablespoons green peas
4 cups cooking oil

Marinade Ingredients
½ an egg white
½ teaspoon salt
1 tablespoon cornstarch
½ tablespoon rice wine

Seasoning Ingredients
3 tablespoons tomato sauce
2 tablespoons water
1 tablespoon sugar
½ tablespoon vinegar
2 teaspoons cornstarch
½ teaspoon salt

  1. Cut lobster in half at the neck. Reserve head and tail. Remove meat from shell and cut into 2.5cm cubes.
  2. Mix well lobster meat with marinade and keep aside, 30 minutes.
  3. Wash and clean head and tail of lobster. Lightly brush with some oil and steam 20 minutes.
  4. Place steamed head and tail at the ends of an oval serving plate.
  5. Heat oil and fry lobster meat over high heat, 10 seconds. Drain.
  6. Drain off all but 3 tablespoons oil from pan. Reheat and stir-fry onions till soft.
  7. Add seasoning ingredients and lobster meat. Mix and cook till sauce thickens and add in the green peas.
  8. Dish up neatly between the head and tail and serve hot.
