Preparation time : 8-10 minutes
Cooking time : 40-50 minutes
Ingredients :
4 chicken or duck gizzards
2 chicken or duck livers
3-4 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon ginger sherry
6 tablespoons water
Method :
After removing the 'bag', well wash the gizzards and put them aside. Wash the lives, too.
Make a marinade by bringing the soy sauce, sugar, sherry and water to the boil in a small pan. Leave to become cold. Add the gizzards and livers. Cover and bring slowly to the boil. Simmer for 15-20 minutes, then remove the livers and leave them to become cold. Remove them and leave them to become cold.
Trim the tough skin off the gizzards, and then very thinly slice them and the livers. Serve cold without any sauce.
To Serve Hot
Reheat the slices in the marinade and serve a little of it as 'sauce'.
