This dish has a delightfully crunchy flavour. If mange-tout (snow peas) is not available, green or French beans may be substituted. Bamboo shoot and water chestnuts may be obtained from Chinese provision stores.

5cm fresh root ginger, peeled and finely chopped
1/2kg mange-tout (snow peas), cut into 5cm length
50g canned bamboo shoot, drained and sliced
4 water chestnuts, sliced
1 tables rice wine or dry sherry
1/4 teaspoon sugar
