Stir-fried Broccoli with Prawns
   

 

Ingredients

  • 750g Chinese broccoli (trim off old leaves; cut into 10cm sections)
  • 500g prawns (shelled and deveined)
  • 3 slices ginger (shredded)
  • 1 tablespoon rice wine
  • Cooking oil for deep-frying
  • 1 teaspoon salt

Marinade Ingredients

  • ½ tablespoon ice wine
  • 1 slice ginger (finely shredded)
  • A pinch salt
  • ½ an egg white
  • 1 teaspoon cornstarch

Seasoning Ingredients

  • ½ teaspoon salt
  • ¼ teaspoon sugar
  • ½ teaspoon sesame oil
  • 1 teaspoon cornstarch
 
 
 

Method for Cooking Stir-fried Broccoli with Prawns:

  1. Mix together the prawns and marinade ingredients. Keep aside for 20 minutes.

  2. Bring a large pot of salted water to the boil. Add broccoli and cook 1 minute. Drain an plunge into cold water. Drain again.

  3. Heat 2 tablespoons of the oil and stir-fry broccoli a few seconds. Add ¼ tablespoon rice wine and salt. Stir-fry over high heat, 30 seconds. Remove and keep aside.

  4. Heat oil for deep-frying and deep-fry prawns over medium heat 1 minute. Drain.

  5. Drain off all but 1 dessertspoon oil from pan. Reheat and stir-fry ginger till fragrant. Add broccoli, prawns and seasoning ingredients. Toss to mix, and heat through. Dish up, sprinkle with remaining rice wine and serve hot.
