Stuffed Bell Peppers

   

 

Ingredients

  • 2 big green bell peppers
  • 185g chopped pork
  • 90g prawns (shelled, deveined and chopped)
  • 15g dried prawns (soaked, drained and pounded)
  • ½ teaspoon salt
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper
  • Cornstarch, to sprinkle
  • 1 tablespoon fermented black beans, 2 cloves garlic and 1 inch piece ginger; chopped
  • 6 tablespoons cooking oil

Seasoning Ingredients

  • 1 tablespoon soy sauce
  • ¼ teaspoon salt
  • ¼ teaspoon monosodium glutamate
  • ¼ teaspoon sugar
  • ½ cup water
 
 
 

Method for Cooking Stuffed Bell Peppers:

  1. Mix together the fresh and dried-prawns. Add salt, sugar, pepper and 1 tablespoon cornstarch. Throw mixture lightly against inside of bowl to mix well. Keep aside.

  2. Cut each bell pepper into 3 sections and remove seeds. Trim each section into a 2 inch circle and sprinkle inside with cornstarch.

  3. Fill each circle with prawn mixture, leveling filling with back of spoon.

  4. Heat oil and place stuffed green peppers, filling side down in pan. Fry 1 minute, till golden brown.

  5. Push peppers to side of pan and add chopped ingredients. Stir-fry till fragrant.

  6. Add seasoning ingredients and return green peppers to centre of pan. Cook covered over low heat, 8 minutes, till very little liquid is left. Dish up and serve hot.
