Stuffed Grey Mullet

Cooking time : 15 minutes
Ingredients :
11/2 oz. grey mullet
1 small thin slice fresh ginger
1 spring onion
Good pinch each salt and Ve-Tsin
Several shakes pepper
1 teaspoon ginger sherry*
2 Pacific prawns, cleaned and chopped
1 teaspoon cornflour
*Cut 2 oz. fresh ginger into thin strips. Turn them into a bottle and cover with 1/2 bottle warm brown sherry. Leave to infuse, strain and use as directed.
Method :
Scale and wash the mullet. Cut through the belly and remove the insides.
Break the spine bone at the head and tail ends and carefully remove it. Remove the flash away from the skin on both sides, leaving the head and tail intact.
Pick out and discard any small bones remaining in the flesh. Chop the flesh.
Add the finely chopped ginger and onion, seasonings and sherry and prawns. Mix all together to a smooth paste.
Spread the mullet, inside up, on a board and sprinkle the cornflour all over it. Add the paste and bring the skin on each side over it to shape the fish into its original from, patting it well so that the skin will adhere to the stuffing.
Place the fish on an oiled oval plate, steam it for 15 minutes and serve.
