2 tablespoons cornflour
120g light brown sugar
pinch salt
120ml cider vinegar or rice vinegar
1 clove garlic, crushed
1 teaspoon root ginger, grated
6 tablespoons tomato ketchup
6 tablespoons reserved pineapple juice
