Cantonese Recipes : Sweet-sour Pork Ribs

 

1kg pork spareribs (8cm pieces)
5 tablespoons cornstarch
cooking oil for deep-frying
2-3 tomatoes, sliced or cut into decorative shapes
1-2 cucumbers, sliced

Marinade Ingredients
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon soy sauce
1/2 tablespoon rice wine
2 cloves garlic, finely chopped
a dash monosodium glutamate

Sauce Ingredients
1 tablespoon tomato sauce
1/2 tablespoon Worcestershire sauce
1/2 tablespoon sugar
1/2 tablespoon soy sauce
1/4 teaspoon sesame oil

 

  1. Mix together the spareribs with marinade ingredients and keep aside, 1 hour.
  2. Mix in the cornstarch.
  3. Heat oil and deep-fry spareribs over medium heat, 4 minutes. Drain.
  4. Reheat oil till very hot and re-fry spareribs, 1 minute. Drain.
  5. Bring sauce ingredients to the boil. Stir in 1 tablespoon of the used oil.
  6. Add fried spareribs and toss to coat with sauce.
  7. Dish up, leaving excess sauce in pan. Serve, garnished with tomatoes and cucumber slices.
