Szechuan Recipe : Turnip and Salted Pork Soup

Ingredients :

750g turnip
155g salted pork (half fat & half lean meat)
1/2 teaspoon peppercorns
4 stalks spring onions (crushed)
5cm piece ginger (crushed)
5 cups water
1 teaspoon rice wine
1 tablespoon soy sauce
salt to taste

Method :

Pare turnip and cut into thin round slices.
Dry fry peppercorns in pan, over low heat till fragrant (do not allow them to scorch).
Pour in the water and bring to the boil.
Add pork and rice wine; simmer 10 minutes.
Remove pork from soup and cut into thin slices.
Add sliced turnip, spring onions and ginger to soup. Simmer 20-30 minutes over low heat.
Season with soy sauce and salt.
Add salted pork slices. Dish up and serve hot.
