Microwave Recipe : Ginger Mutton Stew


Serve : 4
Preparation time : 15 minutes
Cooking time : 42 minutes
Standing time : 10 minutes


Ingredients :

300g mutton

(A)
1/2 tablespoon preserved soybean paste
1 teaspoon chopped garlic
1/2 tablespoon oil
40g ginger, peeled and sliced thinly
1 teaspoon peppercorns, crushed
2 star anise
5 cloves

(B)
2 teaspoons cornflour
1 tablespoon water

1 cup water
1/2 teaspoon salt
1/2 teaspoon sugar

 

 

  1. Cut mutton into 2cm cubes. Mix ingredients B.

  1. Combine ingredients A in a 24cm casserole and microwave on power HIGH for 21/2 minutes, uncovered.
  2. Add mutton cubes, water, salt and sugar, then cover and microwave on power HIGH for 5 minutes.
  3. Simmer on power MEDIUM-LOW for 35 minutes, still covered.
  4. Immediately after the cooking cycle, stir in cornflour mixture, cover and let the casserole STAND for 10 minutes before serving.
