Why Eating Healthfully?
As science continues to unravel the links between nutrition and health, the saying “You are what you eat” appears to have some basis in fact.
Every cell that is in your body today is made up of molecules that were not present a year ago. They have all come from one source – your food. Diet, therefore, needs to provide all the vitamins, minerals, fiber, essential fatty acids, protein, and energy that is needed to achieve good health.
But an unbalanced diet can lead to poor health. Eating too much saturated fat, for example, may cause excessive weight gain, clogged arteries, and coronary heart disease (CHD), while eating too much of certain types of polyunsaturated fatty acids and not enough of others has been linked to inflammatory diseases such as arthritis. If you eat properly, you can reduce the risk of CHD, high blood pressure (hypertension), stroke, irritable bowel syndrome, diabetes, and even many types of cancer.
