Fried Eggs With Shrimps

200g shrimps
50g canned mushrooms
6 eggs
2 tablespoons chopped spring onion
some red chilli shreds
Marinade :
1 teaspoon sesame oil 1/4 teaspoon salt
some tapioca starch
Seasonings :
pinch of salt
1 tablespoon oil
1 tablespoon fish sauce
pinch of pepper
Method :
Rinse shrimps, shell and wipe dry. Add in Marinade and marinade for 10 minutes. Blanch with oil and remove. Cut mushrooms into slices.
Beat eggs. Add in Seasonings and mix evenly. Add in shrimps and mushrooms and mix well.
Heat up 4 tablespoons of oil in a flat-bottom frying pan. Pour in egg mixture and fry briskly till set. Dish out. Scatter chopped spring onion and red chilli shreds. Serve.
