Pan-fried Eggs With Whitebaits

250g whitebaits
3 eggs
1 tablespoon minced garlic
1 tablespoon chopped spring onion
some chilli shreds
Seasonings :
2 teaspoon light soy sauce 1/2 teaspoon salt
pinch of pepper
Method :
Rinse whitebaits and set aside to dry. Beat eggs and blend in Seasonings and beat evenly.
Heat up 3 tablespoons of oil and fry minced garlic till fragrant. Add in whitebaits and fry briefly till the whitebaits turn white. Pour in beaten egg and mix well. Turn over and fry till cooked. Dish out.
Scatter chopped spring onion and chilli shreds then serve.
