Stewed Eggs With Fleece Flower Root

Soak soy beans in water for 6 hours. Soak fleece flower root in water for a while. Rinse wolfberry fruits. Cut ginger into slices. Place eggs in water. Add a little salt. Shell eggs when they are cooked.
Bring 1500ml of water to a boil. Add in soy beans, fleece flower root and ginger slices. Cook over medium heat for 15 minutes till fragrance exuded from the fleece flower root.
Put in eggs and continue to cook till soy beans softened. Add in wolfberry fruits and cook briefly before seasoning with salt. Dish out in a bowl and scatter with coriander then serve.
Tips : The purpose of adding some salt to the water before cooking eggs over low or medium heat is to prevent the eggs from cracking. Eggs that can be picked up using chopsticks are deemed to be fully cooked.
