Stir-friend Eggs with Wolfberries

2 eggs
a pinch salt
2 tablespoons oil
1 clove garlic, chopped
1 shallots, chopped 1/2 cup stock (or water)
1 heaped tbsp wolfberries, rinsed
sliced spring onion, as garnishing
Method :
Break egg into a bowl. Add salt and mix lightly
Heat 1 tablespoon oil in flying pan and fry briefly garlic and shallots till fragrant.
Add stock (or water) and wolfberries. Bring to a boil over high heat. When wolfberries are softened, scoop some up and set aside for garnishing. Allow stock to boil for another 1-2 minutes, till it is reduced by almost half.
Add remaining 1 tablespoon oil and egg. Scramble eggs till almost set. Remove from heat and garnish with reserved wolfberries and sliced spring onions.
