Tips on Choosing Eggs & Storage of Eggs

Fresh eggs usually come with shells of rough texture and sheen pastiness. The egg yolk should be full and lustrous with its egg white coagulating and firm. Eggs that are no longer fresh will have shells that appear dull with smooth texture and emit sounds when shaken. An egg with dented yolk and scattering egg white has also turned bad.

Storage of Eggs

The thin shell of an egg makes it more vulnerable to bacterial infection in a hot environment. Buy sufficient eggs in order to preserve the freshness. For storage of eggs, place freshly bought eggs vertically, with the rounder tip on top, on the egg shelf to prevent them from breaking easily. As the egg's air vault is at the rounder tip, it serves as a buffer between the eggs white and air in the room, thus prolonging the freshness of the egg.

Buy unwashed eggs and wipe them with dry cloth, then refrigerate. However, it is best not to wash the eggs immediately after purchasing from market as their shells still contain a protective membrane to prevent any bacterial infection.

The best temperature for the storage of eggs in a refrigerator is between 5-7 °C. Storing it in any temperature lower than that might cause easy freezing and cracking of the eggs. Though storing fresh eggs under refrigerated conditions might prolong its freshness, it should not be left aside for too long a period ( maximum 3 weeks ). This is to prevent any growth of bacteria caused by the surrounding air, temperature and humidity that might result in changes to the quality of the eggs. Eggs stored in boxes will not dry up easily.
