| Napa cabbage | A large, pale green, tightly packed Chinese cabbage that is readily available. Common white cabbage can substitute, but its strong flavor will dominate a dish. |

| Nori (Japan) | Dark green sheets of compressed sea laver, which are used as edible wrappers around sushi and as a shredded garnish on many soup and noodle dish. Store nori in an airtight container away from light, heat and more - essentially - steam. Hold it briefly over a flame to crisp and brighten its color before using. |
