550ml water
125g bean sprouts
125g long beans (cut into 4cm lengths)
125g cabbage (cut into small pieces)
4 stalks lettuce (cut into pieces)
6 soy bean cakes (deep-fried and cut into pieces)
50g potatoes (boiled, peeled, cut into pieces)
2 hard-boiled eggs (shelled, sliced)
1 cucumber (cut into wedges)
Seasoning :
1 teaspoon salt
1 tablespoon sugar
a few lime leaves or lemon leaves
peanut sauce
Method :
Add salt and sugar to water then bring to boil. Blanch bean sprouts in it. Remove and drain. Soak in cold water to refresh.
Put long beans and cabbage separately in boiling water. Boil for 5 minutes. Remove and drain.
Add lime leaves or lemon leaves to peanut sauce then bring to boil
Arrange lettuce on serving dish. Add bean sprout, cabbage, long beans and soy bean cakes. Top with sliced eggs and cucumber wedges. Serve with peanut sauce.
