Method :
Preheat oven to 200
°C. Grind the spice paste ingredients into a fine paste.
Rub 3 to 4 tablespoon of the spice paste into the chicken pieces. Arrange chicken on a baking dish, keeping them snug next to one another.
Heat oil in pan and fry remaining ground paste for about 1 minute, until fragrant.
Add coconut milk to the spice paste. Simmer over a low fire, stirring continuously until the mixture thickens. Season with salt and sugar to taste.
Pour mixture over chicken pieces and bake in the oven for 45 minutes to 1 hour. After 20 minutes, baste the chicken pieces with pan juices every 5 minutes or so.
Remove from oven and allow to rest for 5 minutes. Skim oil off gravy. Pour gravy over chicken to serve.
