Ingredients :
2 tablespoons olive oil
1 onion, chopped
3 clvoes garlic, chopped
2 chillies, chopped
Small handful basil, chopped
5 bay leaves
400g can tomatoes
2 fish stock cubes
600ml hot boiling water
1/2 cup white wine (optional)
250g white fish, cut into bite-size pieces
12 prawns, shelled and deveined
2 squids, sliced into 1 cm rings

Method :
- Heat oil in pot over a medium fire. Fry onions quickly, about 10 seconds. Add garlic and chilli and stir-fry for another 10 seconds or until fragrant. Add basil and bay leaves. Mix well.
- Add tomatoes, fish stock cubes, water and white wine, if using. Simmer for 10 minutes.
- Add fish, cook for 2 minutes, Remove pot from stove. Allow stew to sit for 5 minutes. Serve with toasted garlic bread from the supermarket or deli.
