Mutton Soup

Rise mutton and chop into pieces. Chop shallots. Mince garlic and ginger. Fry plain flour without oil till golden brown then mix with 250ml of water.
Heat up cooking oil and stir-fry shallots, garlic and ginger briefly. Add cumin powder, fennel powder, coriander powder and ground black pepper and fry till fragrant.
Toss in mutton and fry for 1 minute. Pour in 1500ml of water and bring to a boil. Add salt, cinnamon stick, star anise, cloves, cardamoms and pandan leaves and cook till the mutton is tender.
Last of all, add batter mixture and bring to a brief boil. Scatter diced Chinese celery and fried sliced shallots on top.
Notes : The purpose of adding batter is to allow the thicker and more fragrant soup. Enjoy it further with baguette!
