Creamy Crab Croquettes |
Serves : 6

Cooking time : 15 minutes
Ingredients :
500g potatoes, peeled and diced
1 medium onion, finely chopped
250g fresh, canned of frozen crabmeat, drained, thawed and picked over
1 stalk spring onion (scallion), finely chopped
60ml fresh cream
11/2 teaspoons salt
1 teaspoon pepper
60g plain flour
1 egg, lightly beaten with a dash of water
60g breadcrumbs
oil for deep-frying

Method :
- Boil potatoes in lightly salted water for 10 minutes or until tender. Drain well and mash until smooth.
- Add onion, crabmeat, spring onion, cream, salt and pepper to taste, and mix well with the mashed potatoes. If necessary, place potato mixture into a small baking tray or shallow bowl and freeze for 10 minutes or until mixture is firm.
- Season the flour with salt and pepper then set aside on a plate.
- Form the potato mixture into patties 6 cm across and 3 cm thick. Coat each patty with flour, then dip in the beaten egg mixture and coat in breadcrumbs. Prepare all the patties the same way and set aside on a tray.
- Heat a saucepan over medium heat. Add oil and heat to 180 ˇăC or until bubbles form around the edge of a wooden spoon lowered into the oil. Fry croquettes until golden brown, turning once. Drain on absorbent paper and serve warm.
