Grilled Skewered Chicken |

Ingredients :
1 tablespoon sugar
60ml mirin
125ml soy sauce
125ml sake
500g chicken meat
200g chicken liver
4 fresh shiitake mushrooms, stems removed
2 bell peppers, cut in 3cm squares
1 leek, cut into 21/2cm pieces
16-20 skewers, 20cm long
Seven-spice chilli powder (as below)
Lemon wedges for garnish
Seven-spice chilli powder is a potent blend of ground chilli with other seasonings such as mustard, sansho, black sesame and poppy seeds. If is often sprinkled on noodles, grilled items and one-pot dishes. It is widely available in food stores and is packaged ready-mixed in bottles.

Method :
- To prepare sauce, combine sugar, mirin, soy sauce, and sake in a saucepan and bring to a boil. Reduce heat to low and cook for about 15 minutes, reducing the sauce to 1 cup.
- Dice the chicken meat and liver, then thread onto skewers, alternating with pieces of leek and bell pepper. If bamboo skewers are used, soak in water at least 10 minutes before use.
- Heat the broiler. Baste the ingredients with the sauce.
- Broil the skewers for about 2 to 3 minutes, turning three of four times and basting each time, until the chicken and livers are just cooked. Do not overcook.
- Remove from the heat. Sprinkle the skewers with seven-spice Chilli Powder and serve with lemon wedges.
