Sake-simmered Pork with Vegetables |
Serves : 4-6
Preparation time : 10 minutes
Cooking time : 10-12 minutes
Ingredients :
125ml sake
1 teaspoon dashi powder dissolved in 250ml water
1 small carrot, sliced thinly on an angle
3/4 cup leek thickly sliced an angle, soaked in water
100g dried Japanese potato starch noodles or Chinese mung bean noodles
250g pork fillet or shoulder, very thinly sliced
1 tablespoon soy sauce
1 tablespoon lemon juice
1 spring onion (scallion), thinly sliced

Method :
- Combine sake and dashi mixture in a large frying pan or saucepan and bring to the boil. Reduce heat to medium, add carrot, leek and noodles, if using, and cook for 2-3 minutes or until vegetables are tender.
- Add pork, soy sauce and lemon juice and cook until pork is no longer pink, stirring continuously. Remove pan from heat, cover and stand for 5 minutes.
- To serve, divide vegetables, noodles and pork between 4 small bowls and spoon over some of the cooking liquid. Garnish with a sprinkle of sliced spring onions.
Notes : The pork must be cut in very thin slices, approximately 2 mm thick. To achieve this, partially freeze the meat then slice carefully with a sharp knife.
