Sauteed Chicken and Vegetables in Daikon Dressing

Cooking time : 10 minutes
Ingredients :
450g boneless chicken meat, skinned and cut into bite-sized pieces
2 teaspoons finely grated fresh ginger 1/2 teaspoon salt 1/2 teaspoon pepper
2 teaspoons potato starch or cornflour
1 tablespoon oil
1 medium carrot, thickly sliced and blanched
1 small onion, thinly sliced, soaked in water and drained
Daikon Dressing : 1/4 teaspoon dashi powder dissolved in 60ml water
2 tablespoons sake
2 tablespoons mirin
2 tablespoons soy sauce
1 cup grated daikon
Method :
Stir Daikon Dressing ingredients together in a bowl, mix well and set aside.
Drain chicken pieces and stir in ginger, salt and pepper. Dust lightly with a little potato starch and shake to remove excess.
Heat oil in a frying pan over medium heat and saute chicken pieces until golden brown and tender, turning once. Drain on absorbent paper.
Toss chicken pieces, carrot and drained onion in prepared Daikon Dressing and divide between 4 bowls. Garnish with sliced shiso or basil leaves and serve warm or cold.
