Sweet Red Bean Soup with Roasted Rice Cakes

Ingredients :
400g can sweetened boiled azuki beans (see note)
400ml water
4 small dried Japanese rice cakes (mochi, see note)
Method :
Place azuki beans and water into a medium saucepan. Bring to the boil. Reduce heat and simmer for 15 minutes or until liquid starts to thicken slightly.
Meanwhile, place mochi under a hot grill and grill for 2-3 minutes each side or until puffed and lightly browned.
Turn off heat, ladle soup into four small individual bowls. Top each with a toasted Japanese rice cake and serve immediately.

Azuki beans are small sweet red beans used to make sweet red bean paste, a filling used in many Japanese cakes and desserts. They are also used in rice dishes or salads.
Japanese rice cakes (mochi) are shaped from glutinous rice that has been steamed and pounded into a paste.
