Ingredients :
200g chicken wings (cut into medium-sized pieces)
200g squids
200g prawns (peeled)
Ground
4 cloves garlic
2 shallots
2cm piece ginger
2 large onions (sliced)
Bruised
3 stalks lemon grass
10 cili padi / bird chillies
5 lime leaves
1 packet Tom Yam paste
1 dried assam slice
a little butter (for frying)
2 litre water
sugar, salt to taste
Vegetables (cut small)
1 medium carrot
200g cauliflower
150g young sweet corns
100g button mushrooms
2 large tomatoes

Method :
- Melt the butter. Fry the ground ingredients, bird chillies, lemon grass, lime leaves, chicken wings, squids and prawns. Cover and simmer for a few minutes.
- Stir in the carrots, cauliflower, young sweet corns, dried assam slice, mushrooms, water and tom yam paste. Bring to the boil, stirring once in a while.
- Simmer till the chicken is cooked, then put in the onions and tomatoes. Cook for 2 minutes more before serving in bowls.
