Spicy Roasted Chicken with Honey

Spicy Roasted Chicken with Honey

Serves : 4

Ingredients :

700g chicken breast
4 dried chillies
5 tablespoons honey
1 teaspoon lime juice
1 teaspoon ground black pepper
10 pandan leaves
salt to taste
ghee for greasing

Ground ingredients :

5 cloves garlic
3 shallots
2cm piece turmeric
3 tablespoons coriander seeds

Method :

In a covered dish, put the chicken, ground ingredients, black pepper, salt and lime juice. Mix well then marinate in a refrigerator overnight.
Rub ghee all over the chicken, then wrap it with pandan leaves. Tuck in the ends to tidy it. Grill or roast till the chicken is cooked.
Unwrap the leaves, then rub the chicken with honey. Arrange on a serving platter.
