Method :
- Rub the fish with lime juice, salt and white pepper. Then steam it till cooked through. Place on a serving platter.
- To prepare the sweet and sour sauce :
Heat a little oil, saute the blended ingredients, chilli sauce, chilli paste, palm sugar, sugar, lemon grass, cucumber, pineapple, onion and just enough water to partly cover the mixture.
- Stir occasionally till the sauce boils.
- Just before serving, pour the sauce over the fish and garnish.
