600g near-ripe papaya
4 tablespoons vinegar with 3 tablespoons water
61/2 tablespoons sugar
1 teaspoon salt
Preparation :
Skin papaya, discard the part nearest stem. Cut into quarters.
Remove seeds and a thin layer of inner part.
Slice finely. Wash and drain in metal sieve.
Method :
Put the cut papaya into a porcelain or pickle jar, add vinegar, sugar and salt. Mix well. Cover and keep overnight. Serve.
Note:
This pickle will keep indefinitely if refrigerated.
