Cabbage in Coconut Milk

225g cabbage
1 small carrot
1 small reds sweet potato
4 fresh red chilies
1 big onion
50-75g dried prawns
thumb-sized piece shrimp paste (belacan)
1/2 coconut, grated
3 tablespoons cooking oil
salt to taste
2 pips garlic
Preparation :
Cut cabbage into bite-size pieces. Wash and drain.
Cut carrot into decorative shapes.
Cut sweet potatoes into small pieces.
Pound chilies, shallots and garlic till fairly fine.
Wash dried prawns and drain.
Add 2 rice bowls of water to the grated coconut and squeeze for milk.
Method :
Heat pot. Add coking oil. When hot, fry pounded ingredients, shrimp paste and dried prawns.
Stir well for 1/2 to 1 minute. Add about 2 rice bowls of water, before adding sweet potatoes and carrots. Boil until carrots and sweet potatoes are cooked.
Add coconut milk, cabbage and salt to taste. Bring to boil.
When vegetables are cooked, serve.
Note:
If you do not particularly like cabbage, you should substitute it with spinach or sweet potato leaves.
