8 hardtail
2 big stalks lemon grass, bruised
1 piece tamarind
11/2 tablespoon dark soya sauce
1 rice bowl of water
2 tablespoon light soya sauce
Sugar and salt to taste
A pinch of monosodium glutamate (optional)
Preparation :
Remove scales, gills and intestines of fish. Leave heads intact. Season with 1 1/2 teaspoon salt for 15 minutes.
Method :
Heat a pot. Add water, soya sauce, lemon grass and tamarind piece, bring to boil.
Add fish and chilies. Boil till fish is cooked.
Add sugar, salt and seasoning (optional) to taste. Serve
Note:
Cook on medium flame or dish will burn.
