600g stingray
10 shallots
3 fresh red chilies
1 tablespoon shrimp paste
2 big limes
1 tablespoon dark soya sauce
1 teaspoon light soya sauce
1/4 rice bowl boiled water
Banana leaves
Preparation :
Cut stingray into 3 sliced lengthwise. Clean, wash and drain.
Soak banana leaves in boiling water till soft. Remove and clean.
Wrap each piece of stingray in 2 to 3 layers of banana leaves.
Method :
Place wrapped stingray in a pan with 3 tablespoon oil.
Cover and fry over low flame.
Keep turning often until fish is cooked. It may take about 20 minutes. Remove and serve with sauce.
Sauce :
Sliced shallots finely.
Sliced chilies
Fry shrimp paste over low heat until dry and powdery, dish out.
Put cut shallots, chilies, fried shrimp paste, dark soya bowl. Add 1/4 rice bowls of boiled water and stir well till sugar dissolves. Serve with fish.
