Nasi Kunyit

 

Ingredients :

600g glutinous rice
1 coconut, grated
2 pieces thumb-sized turmeric
2 pieces tamarind
8 screwpine leaves
11/2 rice bowl water
1/2 teaspoon salt
30 white peppercorns

 

Preparation :
  1. Pound turmeric finely.
  2. Wash glutinous rice and drain.
  3. Put glutinous rice into a deep container. Add water till rice is covered. Put the pounded turmeric into a metal sieve or coffee strainer. Dip it into the soaked rice. Stir slowly till rice and water become evenly yellow. Allow the rice to soak for 5 to 6 hours.
  4. Add 11/2 rice bowls of water to grated coconut and squeeze for milk. Set aside.

Method :

  1. Drain the glutinous rice.
  2. Place screwpine leaves on the steaming tray and spread the glutinous rice on top. Steam for 20 minutes.
  3. Remove glutinous rice and place in a container. Add ½ teaspoon salt to the coconut milk and stir well, then pour the coconut milk into the steamed glutinous rice. Stir the rice to mix well with the coconut milk.
  4. Place another 4 screwpine leaves on the steaming tray and spread the steamed glutinous rice on top. Steam for another 20 minutes. Remove and serve.
