Nyonya Recipes : Nyonya Fried Rice

 

1 plate of freshly cooked or overnight rice
1 tablespoon dried prawns
1 A-sized egg
2 fresh red chilies
2cm square shrimp paste (belacan)
2 shallots
2 pips garlic, minced
1 teaspoon light soya sauce
1/2 teaspoon dark soya sauce
1 sprig spring onion
3 tablespoons sesame oil
3 tablespoons cooking oil
monosodium glutamate / seasoning

 

Preparation :
  1. Wash and drain dried prawns after soaking in a little water for one minute. Pound coarsely.
  2. Pound chilies till fine then shallots and garlic. Mix well. Dish out.
  3. Slice spring onions finely.

Method :

  1. Heat frying pan. Add 3 tablespoons sesame oil.
  2. When oil is hot, add sliced onions and minced garlic. Reduce heat and add pounded chilies, dried prawns and stir for half a minute till fragrant. Then add shrimp paste. Stir till shrimp paste dissolves.
  3. Add rice and dark and light soya sauces. Stir until ingredients are well mixed. Push the rice to the edge of the frying pan.
  4. Add 3 tablespoons oil to frying pan. When oil is hot, crack in the egg. Cover egg with fried rice when the bottom of the egg is slightly cooked. Fry mixture till eggs is fully cooked. Add spring onion. Stir. Add salt and pepper to taste.
