Nyonya Recipes : Nyonya Prawn Porridge

 

Ingredients :

1/2 heaped rice bowl rice
300g prawns, shelled, washed, drained
2 tablespoons light soya sauce
10 pips garlic, minced coarsely
1/2 teaspoon salt
monosodium glutamate / seasoning (optional)
pepper
300g groundnuts
cooking oil
a pinch of preserved radish
1 stalk Chinese celery

 

Preparation :
  1. Clean groundnuts and drain. It mush be fried immediately to prevent it from getting soggy and losing its crispness. Put into pan, over low heat, stirring continuously until water dries up. Then add 3 tablespoons oil, 1 teaspoon salt and keep stirring until groundnuts are brown. Dish out and cool.
  2. Wash Chinese celery and cut into small pieces. Set aside.
  3. Fry 8 pips minced garlic with 7 tablespoons oil till brown. Set aside.

Method :

  1. Heat pan, add 4 tablespoons oil till hot. Add 2 pips minced garlic, stir will soft, add prawns and 1/4 teaspoon salt. Stir until prawns are cooked. Dish out and set aside.
  2. Wash rice and drain, put into pot, add 2 rice bowls of water. Boil rice until rice grains break open. Add fried prawns, preserved radish, 2 tablespoon light soya sauce. The porridge at this stage should be just watery, if not add some water. Stir well to mix the ingredients. Bring to boil and remove heat. Do not cover pot or porridge will become too thick.
  3. To serve, scoop porridge into bowl, add a teaspoon fried garlic, shake in some pepper and garnish with Chinese celery. Serve with fried groundnuts.
