Pork Leg in Black Vinegar

1 fore-leg of pork, chopped
300g young ginger
1 rice bowl of Chinese black vinegar
3 tablespoons sugar
1 tablespoon dark soya sauce
1 tablespoon light soya sauce
3 eggs
3 pips garlic, minced
cooking oil
Preparation :
Clean pork pieces. Wash and drain.
Remove skin of ginger and pound to break open.
Hard boil eggs. Shell.
Put ginger in pot, add water to cover ginger. Boil for 5 minutes. Discard the water and set aside the ginger.
Method :
Heat pot, add 4 tablespoons cooking oil. When oil is hot, add minced garlic, stir until soft; add pork pieces and stir for 5 minutes.
Add 31/2 rice bowls of water, black vinegar, sugar, dark soya sauce, hard boiled eggs and 1/2 teaspoon salt.
Simmer until the pork is soft.
Remove from heat and serve.
