300g chicken meat, cut into 2.5cm pieces
3 tablespoons cooking oil + more for deep-frying
350g yam, cut into 1.5cm cubes
6 shallots, peeled and sliced
60g dried prawns (shrimps), soaked for 15 minutes and drained
300g rice, washed and drained
2 teaspoon light soy sauce
875ml fresh chicken stock
1 spring onion (scallion), chopped
1 red chilli, sliced

1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon ground white pepper
1 teaspoon light soy sauce
1/2 teaspoon dark soy sauce
1 teaspoon sesame oil
1 teaspoon chinese rice wine
1 teaspoon cornflour (cornstarch)
